2 medium onions, diced handful of fresh, flat leaf parsley, chopped 2 tomatoes, diced or 8 oz canned stewed tomatoes 2 bay leaves 2 carrots, rough chopped 1 TBS hot pepper flakes 3 tsp sea salt 10 cups water 6 TBS olive oil 1 1/2 cup red lentils 4 cloves garlic
Sort and wash lentils carefully.
Sautee carrots and onions in olive oil, until onions are translucent, but not brown. Add garlic and sautee, but don't let garlic become brown.
Add remaining ingredients, except parsley, and simmer until lentils are soft, approx. 1/2 hour. Add parsley at the end of the cooking process.
Serve soup with whole grain bread, toasted and rubbed with garlic.
Additional ways to add flavor and nutrients:
Make a tasty, nourishing pesto, using your food processor.
Blend a handful of parsley, a few cloves of garlic, a few pieces of chopped sun dried tomatoes, a handful of toasted walnuts and a bit of olive oil. Delicious! Top soup with a scant tablespoon of this tasty pesto. Play around with ingredients, using other herbs, such as basil, chives or oregano.
